Alu Gobi Sabzi

History (background):


Sabzi is the Indian term for vegetable preparation. While alu represents potato, the gobi could either mean cauliflower or cabbage. Alu gobi sabzi is a popular vegetable preparation in India, in fact one of the earliest a child is introduced to. The nourishment of the combination also adds color and spice to a regular rice and lentil fare. Alu gobi preparation could either be bland or spiced up, depending on who the kitchen caters to. The carb, protein and fibre rich vegetable preparation is also a common add on to many a spread, to add quantity and flavor.

Ingredients:

  • 2 large potatoes
  • 1/4 kg cauliflower or cabbage
  • 2 medium sized tomatoes
  • 1 capsicum
  • 1 large onion
  • 4 flakes of garlic
  • 1 inch piece of ginger
  • 1 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 2 tablespoons vegetable oil
  • Fresh coriander leaves

Popular Accompaniments:


Alu gobi sabzi can be eaten plain, or with dal (lentil) and rice. It is also relished by children with hot rotis or bread. If eaten with rice, a tall glass of flavored yogurt makes a whale or a difference.

Preparation:

  1. Wash and dice the potatoes
  2. Separate the flowerets of the cauliflower/ chop the cabbage lengthwise. Wash and set aside.
  3. Puree the tomatoes
  4. Wash and dice the capsicum
  5. Chop the onion fine
  6. Crush the ginger and the garlic and chop fine
  7. Chop the fresh coriander leaves
  8. Keep all the other ingredients close at hand

Main Cooking:

  1. Heat the oil in a heavy bottom pan.
  2. Stir fry the crushed garlic and ginger.
  3. Add the chopped onion and fry till golden brown.
  4. Add the tomato puree and stir well for a minute.
  5. Add the red chilli, turmeric, cumin and coriander powder and simmer for a minute.
  6. Add part of the chopped coriander leaves.
  7. Add the potatoes, capsicum and cauliflower/ cabbage and salt to taste.
  8. Do not add water. Just keep stirring the vegetable regularly.

Presentation:


Serve the alu gobi sabzi garnished with chopped coriander leaves and a wedge of lemon. Serve with hot roits. When serving alu gobi sabzi with rice, you could either serve the rice pre plated with any vegetable curry or dal. This vegetable preparation also goes well with mutton or chicken biryani.
