Cauliflower is a popularly used veggie in all of the state of Maharashtra. This utterly mouthwatering delicacy is just one way of the kitchen experimenting with the versatility of the flowerets and the unique taste of cauliflower.
Ingredients:
1kg cauliflower, cleaned and cut into flowerets
1 tablespoon of cashew paste
1 onion, large in size, chopped fine
1 large tomato pureed in a blender
1/2 cup of grated cottage cheese
1/2 cup of oil or cooking medium
1/4 cup of fresh coriander leaves, chopped fine
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon mixed spice powder
1/2 teaspoon coriander powder
1 green chili, slit lengthwise
1 teaspoon of ginger and garlic paste
A pinch of cumin seeds
2 each of cloves and green cardamoms
Salt and water to taste

The curry is commonly eaten with different rice preparations and rotis. The gravy also goes well with parathas that have different stuffing. It is nutritious and very rich in fiber.
Preparation:
Take a heavy bottom vessel or pan, preferably with its own cover or lie, and roast the cumin seeds and whole spices – cardamoms and cloves till they are well browned and become very aromatic.
Next in a little cooking medium allow the chopped onions to fry till each piece is a nice golden brown.
Allow these seasoned ingredients to cool and once they are at room temperatures, blend them together to get a rich, aromatic curry paste.
Add the green chilies, cashew and ginger and garlic paste to this mix.
Main Cooking:
Next, heat some more oil or cooking medium in the pan and stir fry the cauliflower flowerets in it.
Once the flowerets are lightly browned and partially cooked, set the vegetable aside.
Now heat all the remaining cooking medium and again fry the gravy paste till the oil separates from the paste and leaves the sides of the pan.
Add turmeric, red chili and the mixed spice powder and continue to fry the gravy base for another minute.
Now reduce the flame and slowly add the cauliflower flowerets, water and salt as per the preferred taste and gravy consistency.
Allow the gravy to come to a boil and cook till the cauliflower is well done.
Presentation:
Garnish the gravy with fresh coriander and the grated cottage cheese and serve hot.
