To prepare the traditional Christmas cake, you will need 3 eggs, half cup of sugar, both plain and powdered (1 and 1/2 cup), half cup of cocoa powder, one tablespoon of soda powder and vanilla essence, half teaspoon of baking powder and 2 cups of refined flour. You will also need some butter and curd, both 3/4 cup, and half cup of water. You can use 1/4 cup of cocoa powder, sugar, salt (to taste), water (1 cup), half cup of butter, one cup of icing sugar, half teaspoon of vanilla essence and 1 tsp of refined groundnut oil. Mix all the ingredients and boil till the mixture becomes thick. Once thickened let it cool down. Keep stirring. Mix one egg yolk with the vanilla essence and add butter and powdered sugar to it. Add the other eggs along with the cocoa mixture you prepared at the beginning. Now, you can add baking powder and refined flour on one side and curd and soda powder on the other mix them both while stirring continuously. Heat the mixture for 45 minutes in a pre-heated oven at a temperature of 350 degree F.
For icing, add sieved icing sugar, cocoa, and salt to water which has been heated with sugar. Add vanilla essence, groundnut oil, and butter to the mixture and mix well before pouring it over the cake evenly.
