Coriander stack-away


History (background):


Maharashtra is one Indian state that is popular around the country and the whole world for a cuisine that may be spicy but is also quite unlike any other. Coming from the heart of Maharashtra is the coriander stack away that is the favorite food of the farmer and landowner alike. The stack away made form coriander is known to address health issues pertaining to high blood pressure and depression. The preserves are a hit with children and adults alike.

Ingredients:

  • 1 cup of fresh coriander leaves, washed and finely chopped
  • 1 cup gram flour
  • 1 small onion, chopped fine
  • 3 cloves of garlic, chopped or grated fine
  • 1/4 tsp turmeric powder
  • 1 tbsp red chili
  • 1 tbsp ginger paste
  • 1 tbsp of cooking medium (Oil)
  • 1cup of oil for shallow frying
  • Salt to taste
  • Water, as per requirement

These preserves are great during the monsoons and go well with a tea or sherbet session. They are nutritious and very tasty. The coriander can be replaced with fresh mint leaves or any other leafy green vegetable to change the taste and add to the already innovative snack. You could experiment with the proportions to suit the tastes of your family and work on chutneys to enhance taste. The snack can be fried and kept away for future consumption of up to a fortnight. This makes it a great afternoon investment in the kitchen. Children are known to enjoy the snack for school break and make a meal out of it. Preparation:

  1. Place the onion, 1 tbsp of cooking medium and garlic into a microwave dish and sauté for 2 minutes.
  2. The mixture should get a light brown texture.
  3. Slowly mix in the gram flour and water to make a batter.
  4. Put the dish back in the microwave for 4 minutes, stirring it just once.
  5. The mixture should thicken.
  6. Set aside to cool.
  7. Then mix in all the remaining ingredients and again work the microwave for another 4 minutes.
  8. A ‘setting consistency’ should be achieved.
  9. Remove the mixture and spread I into rectangle around half an inch in thickness.

Main Cooking:

  1. When cooled completely, cut it into square pieces, shallow fry till golden brown

Presentation:


Serve hot, garnished with a sprinkle of fresh coriander leaves and chutney of your choice or even tomato sauce.
