Cottage Cheese extravaganza


History (background):


The cottage cheese extravaganza is one way of the kitchen in Maharashtra showing how dedicated it is to nutrition and how fond its people are of the cottage cheese delicacy. This dish takes merely minutes to put together. It is very nutritious and constitutes to healthy eating. Cottage cheese by itself is a very protein rich meal and is even eaten plain throughout the state. This dish tempers with the original taste just a bit to bring you all the goodness of the basic ingredients.

Ingredients:

  • Quarter kilo cottage cheese, diced and carefully separated
  • 2 spring onions with the leeks cut lengthwise
  • 2 carrots cut lengthwise into narrow, fine strips
  • 2-3 cloves of garlic, chopped really fine or crushed
  • 1/4 cup cooking medium or oil
  • 3/4 teaspoon each of cumin, coriander, red chili and mix spice powder
  • 3 medium sized tomatoes pulped
  • Salt to taste

The dish can be eaten plain or with hot rotis or chapattis. It goes well with bread too. It is a meal and very nourishing for children. You could throw in an assortment of veggies from time to time to add to taste and nourishment value of the dish. With a little gravy, the dish also goes well with rice. You could serve it as it is when on a protein diet to lose weight fast. Cottage cheese does more than just give you a flawless complexion. It is known to strengthen the immune system in time of illness and being easy to chew on and digest, it is ideally great for the aged.

Main Cooking:

  1. You need to first heat the oil well.
  2. When the oil is nice and hot, add the crushed or finely chopped garlic.
  3. Allow the flavor and aroma of the garlic really soaks into the oil.
  4. This is achieved once the garlic bits get a nice light brown color.
  5. Allow the heat to be reduced to a slow flame and then add the strips of the spring onion, carrots and capsicum.
  6. Stir fry the mix along with cumin, coriander, red chili and mix spice powder and the pulped tomatoes.
  7. Add salt and allow the mix to cook on a slow fire for around 2-3 minutes.
  8. Now add the diced cottage cheese pieces and stir in the gravy enough to ensure that the cottage cheese integrates well with the base.
