Ingredients:
1 cup refined flour
1/4 tsp each of cumin seeds and ajwain seeds
a pich of soda bicarb
cooking medium
Salt to taste
warm water for kneading

Matri goes very well with tomato sauce. You can choose to try out variations in garnishes by including mint, cheese or oregano. This meal component can also be eaten along with any main course serving. It is an authentic Gujarati dish and does not call for a specific reason for the family to celebrate. Matri takes only minutes of kitchen time and you could simplify the meal by serving it with plain rice. The snack is excellent at tea time and can be stored for months on end. You can also include spices and flavors of your choice to jazz up the matri. Try a sprinkle of chili flakes or a dash of schezwan sauce while serving matri, hot or cold, and watch the kids put down the whole lot. It is healthy and with all the oil well drained, it remains crisp for a very long time. You could make the matri crunchier by adding a spoonful of rawa or semolina to the flour. Also remember ghee is much better as a cooking medium than oil.
Preparation:
Mix all the ingredients together with a little clarified butter or ghee and just enough warm water to get pliable dough.
Allow the dough to stand for around 10 minutes.
Main Cooking:
Make even sized biscuit shaped portions and deep fry till they become crisp.
Drain the oil well and allow the matri to cool well prior to storing it.
