Mustard is such a wonderful spice and one cannot get enough of it. Mustard paste can be used with any food. The simplest way to make mustard paste is to powder the seeds and mix them with a little water. However, when you mix the mustard powder with water, sometimes it changes its color from yellow to brown loses its pungency. In some cases it might even taste bitter.
It would be a better idea to make mustard paste by adding some form of citric acid, glacial acetic acid, or some sweetening agent. This way, the pungency is not lost. In some cuisines which use a lot of mustard, the seeds are powdered and then mixed with vinegar. Alternately the seeds can be ground with the vinegar, and then the paste used.

It adds to the taste. Mustard paste is used to spice up a mixed vegetable dish where all the vegetables are lightly broiled and tossed with mustard paste. Grilled fish tastes great with mustard paste.
