Okra Tomato Soup


History (background):


Okra soup is a tasty and lip smacking soup, famous in Hyderabad. Most of the people prefer okra along with tomato. Okra can be used for preparing curry or for preparing soup. Okra is also called as bhendi. Soup made with okra will be delicious and easy to serve. Scientific name of okra is abelmoschus esculentus. It’s commonly called by the name Hibiscus esculentus. Okra grows 2 m tall. Leaves of okra plant are 10-20cm broad; they are nicely lobed with 5-7 lobes. Okra and tomato form a special combination. When okra is nicely mixed with tomato, special soup can be formed. This soup is good for summer and winter seasons. Winter season this soup acts as a good source of rising heat inside the body. The soup formed from okra and tomato, is good for heart. It can be digested easily, and it’s ideal for people of all ages.

Ingredients:

  • Olive oil 1 tsp
  • Green onions sliced 4
  • Butter 1 tsp
  • Small clove garlic 1 minced
  • Celery sliced 1 rib
  • Chicken broth 2 cups
  • Tomatoes diced 1 can or 14.5 ounces
  • Okra (8-10 ounces)
  • Corn kernels 1 cup
  • Cajun seasoning 1 tsp
  • Black pepper 1 tsp
  • Salt to taste

Okra and tomato soup can be accompanied with slices of fried bread. Creole and Cajun also add special flavor to okra soup. Muffins or cornbread can also be used, to serve this soup in lunch. In order to make okra soup a family meal, accompany it with hearty salad or sandwich.

Preparation:

  1. Cut garlic pieces and make them paste.
  2. Keep a pan on stove and pour oil in it.
  3. Cut okra into slices and put it aside.

Main Cooking:

  1. Heat olive oil and butter on medium low heat in a pan.
  2. Add onion and garlic and celery to that pan and heat them on low flame. Stir the mixture until celery becomes tender.
  3. Add chicken broth, sliced okra, tomatoes, Cajun seasoning, corn kernels, and pepper and stir that mixture well.
  4. Allow them to boil for some time.
  5. Now reduce the flame and simmer the pan for 20-30 minutes. See that okra becomes tender.
  6. Add salt to taste.
  7. This soup can now be removed and served to people.

Presentation:


Best way to present this soup is in a round bowl, which has wide space inside. Garnish this soup with bread slices (fried). In order to increase spice, you can put pepper side to it.
