Rajasthan is a royal place popular for special food items. Rajasthani food is a combination of bati, dal and Churma. Dal is the lentils and bati is a baked wheat ball. Churma is sweet cereal in powdered form. Rajasthan was once a royal state ruled by many famous kings. These kings had huge kitchens which were used to make special spicy and tasty dishes. Today, the dynasties are non-existent, yet the Rajasthani food is still existent. Kings used to eat non-vegetarian food, mainly meat from camels, goats, pigs and peacocks. Pigeon's meat was most famous among queen's recipes.
Rajasthani food preferred by people today is totally vegetarian. People prefer eating delicious and spicy Rajasthani vegetarian food when compared to non-vegetarian items. Rajasthan is a dry area so people concentrate on preparing food items, which have more water content. They prefer eating Rajasthani food made from leafy vegetables. Dried lentils and beans are used in preparing Rajasthani dishes. Pakodi is a famous Rajasthani dish, which uses gram flour. Powdered lentils are used for preparing papads. Besides regular food items some of the other famous dishes of Rajasthan are Blausahi, Bail-gatte, Gevar, Raabdi, Tarfini and Nukhti. Some of the popular curries served along with Rajasthani food includes Gajar ki Sabji, Karela ki Sabji, Khaddi, Mattar ki Sabji and Moranga ki Sabji.
